August 3, 2020 -- When the temperature rises, the last thing most people want to do is cook dinner over a hot stove, or turn on the oven and heat up the kitchen. This recipe for Creamy Broccoli Slaw from Southern Living is not only easy, but a perfect side dish to everything from BBQ grillin’ favorites to deli sandwiches.
INGREDIENTS
1 cup chopped toasted pecans 1 cup golden raisins
1/2 cup chopped scallions
1 tablespoons apple cider vinegar
2 tablespoons grated lemon zest plus 2 Tbsp. fresh juice (from 3 lemons)
1 teaspoon kosher salt 1/2 teaspoon black pepper
3 (12-oz.) pkg. broccoli slaw mix
INSTRUCTIONS:
Stir together mayonnaise, pecans, raisins, scallions, vinegar, lemon zest and juice, salt, and pepper in a large bowl until combined. Add slaw mix; toss gently until thoroughly coated. Refrigerate 30 minutes. Toss gently and serve.
